Oatmeal Chocolate Chip Cookies



        Angie's Famous and Delicious Oatmeal Chocolate Chip Cookies


1 1/4 cups of whole wheat white flour (unbleached of course)
1/2 cup quick oats
1/2 cup packed brown sugar
1/2 cup sugar
1 stick of butter (you know it!) save the wrapper to butter your pan
1/2 teaspoon of molasses
1/2 teaspoon of baking soda
1/2 teaspoon of salt
*1 egg
1/2 cup chocolate chips (the darker the better...in my opinion)
1 dash of cinnamon (optional)

*If you don't want to use egg you can substitute 1 tbs of flax meal mixed with 3 tbs of warm water. Let the mix sit for about 3 minutes to thicken.  

( I don't like to preheat, but you can) Oven temp- 375. Butter your baking sheet with your saved butter wrapper. (You really don't need any more butter than that or your cookies will get too crispy).
In a medium bow add softened stick of butter, with both sugars and mix. Add egg and molasses. In another large mixing bowl add the remaining dry ingredients minus the chips, stir well. Now combine bowl 1 with 2. Mix well. You can add the chips now.
Ok drop spoonfuls of the dough onto your baking sheet. I usually get a dozen cookies a batch. Each batch should cook for about 6 minutes. This is the most important part: Take the cookies out right before the edges turn golden brown. They won't feel done, but use a metal spatula to transfer them to a plate to cool. Once they cool they will be so chewy and yummy and good...Yields about 24, but depends on how much cookie dough you eat...hehe
